I score this recipe a 7 out of 10. It is much tastier than most "banana bread" I have ever purchased or received as a gift. However, I don't find myself wanting to eat the whole batch all by myself. Maybe that's a good thing, but perhaps it is lacking in a certain ingredient... needs more brown sugar?

Next time I try this recipe, I may do some or all of the following to experiment trying to perfect this recipe further: use only 1 1/2 cups banana nut crunch cereal. Use an additional 2 cups of dry oatmeal oats. Use 4 bananas instead of 3. Use an additional 1/2 tsp of vanilla extract. Use an additional 1/3 cup of regular sugar.

I estimate that this recipe makes about 6-8 cups of mixture. I use a 11 x 7 x 2 (inches) baking dish/pan

Below, "Blend" means use a blender.


Ingredients

  • 3 bananas
  • 1/2 cup butter
  • 1 cup brown sugar
  • 4 egg whites
  • 3 cups of banana nut crunch cereal
  • 2 tbsp flour
  • 1/4 cup milk
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp banana flavoring (artificial, extract)

  • Instructions

    Preheat Oven

    To 350 degrees F

    Blend

    Butter, sugar, bananas

    Add while Blending

    milk, baking soda, salt, banana flavoring, egg whites

    Lightly blend until mixture is consistent

    Pour

    put the entire mixture into a cake pan

    Cook

    put it in the oven, cook for 15 minutes.

    Optional

    cook for an additional 5 minutes (20 minutes total) if you prefer it to be more crisp/dry than slightly mushy
